HERBALIFE Sugar Cookies

INGREDIENTS

4 scoops Formula 1 French Vanilla Shake Mix
1 TBSP Personalized Protein Powder
1 1/2 cups + 2 TBSP flour
1/2 tsp baking powder
1/4 tsp salt
1/2 cup Splenda Blend
10 TBSP unsalted butter
1 tsp vanilla extract
2 large egg whites

ICING

1 TBSP Personalized Protein Powder
2 cups powdered sugar
1/4 cup of 2% milk
1/2 tsp vanilla extract

PREPARATION

IN a medium bowl, combine Formula1 French Vanilla Shake, Personalized Protein Powder, flour, baking powder, and salt; stirring well with a whisk. Place granulated sugar and butter in a large bowl; Beat in vanilla extract and egg whites. Gradually add flour mixture to butter mixture, mixing well until just combined. Divide dough in half. Shape each half into a ball, wrap in plastic wrap and chill for 30 minutes.

Preheat over to 350°.

Unwrap one dough ball. Roll dough out to a 1/4-inch thickness and cut with cookie cutters. Place cookies on cookie sheets 2 inches apart and bake for 10 minutes or until lightly browned. Repeat procedure with remaining dough.

To prepare icing, combine Personalized Protein Powder, powdered sugar, milk, and vanilla extract. Stir with a whisk until smooth. Working with one cookie at a time, spread about 1 teaspoon of icing evenly over each cookie. Let stand on a wire rack until set.

PERSONAL REVIEW

I had to bake 2 batches of these cookies since my little girls ate the first batch before they were even cool. These came out very tasty, even though they don’t taste quite like a traditional sugar cookie. The vanilla shake mix adds a punch to the vanilla flavoring in the cookie and packs more than twice the amount of protein than a regular sugar cookie. These might not be an ideal snack if you are working on losing weight, but they are a great alternative for the kiddos!
